November Snack Ideas

Pumpkin Cookies
1/3 cup sugar
1/3 cup margarine, melted
1/2 cup pumpkin
1 medium egg
1 teaspoon vanilla
1-1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon pumpkin pie spice
Confectioners sugar (optional)

Mix sugar, margarine, pumpkin, egg, and vanilla. Add dry ingredients and beat well. Dough should be stiff - add more flour if necessary. Drop by spoonfuls onto a greased cookie sheet. Bake at 350 degrees Fahrenheit for 15 minutes. Dust with confectioners sugar, if desired. Makes 3 dozen.

Hot Spicy Cider
2 quarts pasteurized apple cider or apple juice
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice

Hear cider, but do not boil. Add spices (more or less, according to your taste). Stir and serve. Serves 8-10 (6 oz cups)

Cornbread
3/4 cup yellow corn meal
3/4 cup flour
1 tablespoon baking powder
3/4 cup milk
1 medium egg
1/4 cup margarine

Combine dry ingredients. Soften margarine. Mix milk, eggs, and margarine and add to dry ingredients. Beat until smooth. Lightly grease an 8x8 square baking pan. Preheat oven at 425 degrees for 15 minutes. Pour batter pan and bake at 425 degrees for 15-20 minutes. Cut into portions equal to the number of children to be served (about 6-8).
