Favorite Salsa Dip
Mix all the ingredients together and serve with baked tortilla chips.
Serves six.
Pretzel Stick Kabobs
Use a wooden skewer or large toothpick to make holes in fruit and cheese.
Thread pretzels through the holes.
Alternate the fruit and cheese, putting them on the pretzel sticks to make kabobs.
Serves four.
Pineapple Sandwiches
1/2 cup cream cheese (4 oz.)
1/2 cup canned pineapple
1/2 loaf of whole wheat bread
Drain pineapple juice into a separate bowl. Mix cream cheese and pineapple
together with a spoon or hand mixer. Use left over pineapple juice to
thin the cream
cheese, if you wish (should be thin enough to spread on bread). Spread
on bread
and top with another slice. Remove crust of bread and cut each sandwich
into four
triangles. Spice this snack up by adding strawberries and/or bananas for
dipping in
leftover mix. Serves 20.
Yogurt Delight
Yogurt and fruit make a tasty snack. In each child's bowl, place
a half a cup of plain yogurt and add a half cup of 2-3 different fruit
choices. Strawberries, bananas, and oranges slices are always yummy.
You may add plain cereal for a crunchy twist.
Broccoli Salad
1 lb fresh broccoli (2-3 florets)
2 Tbsp. vinegar
1/2 cup mayonnaise or miracle whip
2 Tbsp. sugar
3/4 cup shredded cheese
Chop broccoli into bite size pieces and place in a large bowl. Add
vinegar,
mayonnaise or miracle whip, sugar, and cheese. Mix ingredients and
chill in
refrigerator for 2-3 hours. Serve in small snack bowls - serves
15-20.
Shamrock Gelatin
1 package lime gelatin (3 oz)
1-1/2 cups hot water
1 pint vanilla ice cream
Mix gelatin with hot water. Stir in vanilla ice cream. Set in refrigerator
until solid.
Serves 4.
Shamrock Shake
Using a blender, mix 1 banana, 2 cups of lime sherbert, and 2 cups
of milk. Pour into small cups and enjoy! Serves 3-4 children.
